A pleasant coffee that has the sweet flavors of Meyer Lemon and Honeydew melon with a high acidity and finishing with hints of cocoa nibs.
Finca Paraxaj is a property acquired by Trinidad E. Cruz in 1905, a year after founding St. Felisa. Initially Paraxaj was a dairy farm but in 1945 the first Red Typica was planted and it became a coffee plantation. Paraxaj has great genetic diversity featuring more than ten species of trees to shade coffee and different exotic coffee varieties planted throughout the four generations. On this farm in 1998 the first practical production of environmentally friendly coffee was initiated with the application of compost, manure and inoculation of roots. The Typicas of Paraxaj plantations are seventy years old whilst the bourbon and yellow Catuai are 12-14 years old.
